[青椒牛肉丝]Beef with Green Peppers

①Marinate the Beef
Take the sliced beef strips and add salt, cooking wine, sweet potato starch, and a pinch of baking soda. Mix well until evenly combined. Then add a spoonful of fermented bean paste and mix again. Finally, add cooking oil and stir to coat the beef evenly.

②Prepare the Sauce
In a small bowl, combine light soy sauce, MSG, sugar, and water starch. Stir until well mixed and set aside.

③Cook the Dish
Heat a wok or pan over high heat, then add cooking oil. Once the oil is hot, add the marinated beef strips and stir-fry quickly until they just change color. Add the sliced green peppers and the prepared sauce from step ②. Continue stir-frying over high heat until the peppers are about 80% cooked, then immediately transfer to a serving plate.
