① Prepare a piece of pork loin and remove the sinew. Cut it into small strips. Soak the strips in clean water for 10 minutes. After removing, squeeze out the excess water. Add salt and pepper, along with a tablespoon of cooking wine to reduce any unpleasant tastes. Mix well, then add one egg and cornstarch. Pour in an appropriate amount of clean water and stir until evenly combined. Finally, add half a tablespoon of cooking oil to lock in the moisture.

② In a bowl, combine one small packet of ketchup, a half tablespoon of sugar, half a tablespoon of white vinegar, half a tablespoon of clean water, and a little bit of salt. Mix well until the sauce is smooth.

③ Heat oil in a wok until it reaches 60% heat. Carefully add the meat strips one by one. Fry over medium heat for about 5 minutes. Remove and drain the excess oil. Once the oil temperature rises again, return the meat strips for a second fry. This time, fry for about 1 minute.

④ Leave a small amount of oil in the wok. Pour in the sweet and sour sauce and cook over high heat until it thickens. Add the fried meat strips back into the wok. Sprinkle with sesame seeds and quickly toss everything together until evenly coated. Serve immediately.
